Origin Story
Founded in 2023 by Lu Sun, No Stone Estate represents a new wave of innovation in Yunnan’s coffee scene. Guided by scientific precision and modern techniques, the estate manages every part of the coffee journey, from variety selection and field maintenance to processing and storage, ensuring top-quality beans year after year.
A standout feature of this coffee is the use of Buddha’s hand (also known as fingered citron or bergamot), a fragrant citrus fruit native to Yunnan. Revered for its medicinal qualities, this fruit is fermented with water for 8 days to develop optimal Brix and pH levels. The resulting enzyme-rich liquid is then used in a 150+ hour anaerobic fermentation of Catimor P3 and P4 cherries, as part of a traditional honey process.
The outcome is a vibrant, citrus-forward cup. The dry aroma reveals soft floral notes, while the wet aroma brings bursts of citrus and lemongrass. On the palate, bright citrus acidity dominates, giving way to a lingering, slightly spicy finish reminiscent of ginger lily.
Roastery & Brewing Notes
Bright and precise, it opens with a clean acidity that gives way to a refreshing interplay of lemongrass and citrus on the mid-palate. As the brew unfolds, a delicate whisper of ginger lily emerges, adding floral depth and a graceful, lingering finish. Balanced and aromatic, it’s a refined offering for those who appreciate clarity, brightness, and a delicately complex profile.
