Origin Story
This unique microlot was grown by Jairo Arcila at his farm, Santa Mónica, in Armenia, Colombia. Known for his experimental approach to processing, Jairo applied the innovative Natural Ice method to this 100% Castillo lot, a variety developed by the Federación Nacional de Cafeteros for resilience and cup quality.
After harvesting, the cherries underwent a 24-hour dry aerobic fermentation to enhance sweetness and complexity. They were then sealed in GrainPro bags for 50 hours at temperatures below 22°C, allowing controlled fermentation to continue. What truly sets this lot apart is the freezing stage, with the cherries being frozen for 72 hours before they are carefully dried on raised beds at temperatures under 35°C. This slow, deliberate process results in remarkable flavour clarity and layered depth.

This coffee delivers a rich and spirited cup with unexpected vibrancy. The rum-like warmth blends seamlessly with sweet cherry cola notes, balanced by a refreshing burst of citrus. The Natural Ice process brings out a boozy and bold sweetness, making it ideal for both filter and as an espresso.
