Origin Story
This exceptional microlot was grown by Jairo Arcila at his farm, Villarazo, located in the fertile region of Armenia, Colombia. A respected producer known for meticulous processing standards, Jairo ensures every step of the coffee journey meets the highest quality benchmarks. Harvesting begins with strict ripeness selection, followed by floating and hand-sorting to eliminate any defects.
The standout feature of this lot is its 30-hour underwater fermentation—a method that brings clarity and complexity to the final cup. After fermentation, the cherries are pulped and gently washed. The parchment is then dried in temperature-controlled conditions to preserve nuance and achieve optimal moisture content.
This lot is 100% Papayo, a rare varietal born from a natural mutation in Acevedo, Huila. The name comes from the cherry’s resemblance to a papaya, both in shape and its distinctive orange colour at peak ripeness.

Delicate and refreshing, this coffee shines with crisp fruit tones and floral elegance. Expect juicy strawberry notes up front, followed by a smooth wave of peach iced tea that lingers on the mid-palate. The washed process, enhanced by underwater fermentation, delivers excellent clarity and a tea-like structure. Versatile and vibrant, it’s well-suited for both filter and espresso.
