Las Lajas Micromill is situated in the Central Valley of Costa Rica's Alajuela region and is owned and operated by husband and wife duo Oscar and Francisca Chacon. Amazingly they are third-generation coffee producers and as a major part of their family heritage, do not settle for anything less than high quality speciality coffee. 

The farm has strong aspirations to reach new heights having invested in their own depulpers and joined the 'micromill revolution' allowing them absolute control of their production and prices. 

The road to quality coffee production has not been easy for the Chacon's. They have had to adapt and overcome environmental pressures as a 2008 earthquake rendered their farm without power during the peak of harvest. Unable to run their depulpers, Francisca took inspiration from her knowledge of African coffee production and quickly erected raised drying beds for natural cherry processing. 

This gained traction and interest and they now experiment to allow for different effects and notes from their beans to be drawn out depending on the variation of the 'Honey' or Natural processing method used.

We have roasted and cupped this coffee to showcase a festive flavour profile with notes being identifiable one by one. With the initial sip, a fresh and ripe tangerine enters the palette, with steady notes of raisin reaching the tastebuds and finishing with a subtle nuttiness of walnut.
