Origin Story

Eight farmers contribute to this single origin coffee, with the micromill operating as a central point for production, drying and storage. The farmers are paid dependant on the weight of their cherries, and the riper the cherry, the heavier it will be. This payment method encourages farmers to produce their crop at the highest amount of care and quality possible - benefitting them and the end-drinker. Working as a part of a micromill also helps reduce costs as the need for production equipment is no longer required. 

The micromill process these beans following the anaerobic method, which is great for coffee drinkers that enjoy a particularly pungent and distinct taste and aroma. During anaerobic processing the cherries are fermented within pressurised tanks that are starved of oxygen. In doing so, the natural sugars within the cherries are transformed into complex acid particles that radiant a much more exciting flavour and smell.

Roastery & Brewing Notes

This is the first anaerobic coffee that we have roasted at Carrara. It's already become a firm favourite at The Roastery. We recommend serving as a filter to experience all the flavours on offer as a result of the 5-day anaerobic fermentation process.

We have chosen a light roast profile for this coffee to really showcase the fruity notes that we found in the cup.
